Description

Cinnamon peel comes from the soft inner bark of tropical cinnamon trees. After peeling, the bark curls up as it dries out. The paper-thin peels have a sweet yet slightly bitter flavor and intense spicy aroma. Cinnamon sticks are used to infuse teas, hot chocolate, and mulled wines and give a burst of cinnamon when gently cooked in pilafs, curries, chilis, and stews. Break sticks into pieces to add to pickling brines. Cinnamon sticks lend a warm aroma and bold flavor when gently simmered.
