Tarragon is a slender-leafed herb that flourishes across most of Europe and Russia with mild anise-minty sweetness and hints of vanilla, basil, and fennel. Fresh tarragon elegantly enhances tender meats like chicken, seafood, sauces, and salad dressings. To preserve flavor, add leaves near the end of cooking.
