Also called sweet marjoram, this mild mint family herb traces its origins to the Mediterranean and Western Asia. Both the fresh leaves and dried ones have a sweet pine and citrus flavor. Use marjoram to season and enhance the flavors of roasted or grilled meats, mushroom dishes, savory bread, rice, stuffings, and vegetables, especially zucchini and eggplants. Nice addition to herbal teas. Add fresh leaves near the end of cooking to preserve maximum essence and aroma. Lovely paired with parsley, basil, and oregano.
